Pork Salad With Creamy Tomatillo Dressing Recipe
Pork.3 lbs pork. (I have also used chicken) I cook this in my crock pot all day (7-10 hours). The first 4 hours I cook the pork with seasoning. Then I drain the fat and add these items for the rest of the cooking time:
1/2 cup salsa
1 cup soda (try different kinds- it changes the meat flavor. I love Sprite)
1 cup brown sugar (I usually use 1/2 cup because I’m weird about sugar)

Creamy Tomatillo Dressing
1 packet Hidden Valley Ranch Buttermilk dressing
1 cup buttermilk (I use the dry mix and 2/3 cup water sometimes because I always have it on hand)
1 cup mayonnaise
3 tomatillos – they look like green tomatoes with a light covering – a must!
2 cloves of garlic
1 bunch cilantro (1 cup) (Save a bit for the rice)
1/2 tsp cayenne pepper
1/2 jalapeno if you want to add a little wow!
Mix in blender and refrigerate for an hour or more.

These are the items we like to use on the salad or burrito in order. I set it up like a buffet line so everyone can choose to make their burrito their own way. (And I don’t have to serve them)
Tortillas- I use the uncooked tortillas that you heat and serve. This makes it awesome!
Beans
Cheese
Rice – I use brown rice. When I cook this, I add cilantro and lime.
Pork
Lettuce and/or Spinach
Tomatoes
Lime
Salsa
Tortilla chips
